That last row is the one workaround there is: if someone with a Windows machine builds the timeline, the XML opens on your Mac like any other project file.
Ingest Pro is made by one person. A macOS version is not a checkbox: it means a second build, a second signing and notarisation process, and a second set of everything to keep working. It gets done when the numbers say it pays for itself, and the list on this page is half of those numbers. That is the honest answer.
